Not Your Momma Collards

I tend to use both collard greens and kale. I also chop some of the stems instead of throwing them away.

Ingredients:

1 pound of smoked turkey wings

8 cups of water

1 cup of Red, Green and Orange peppers (trust me)

2 cups Chicken Broth

1 tablespoon of garlic powder

1 tablespoon of onion powder

1 tablespoon of Kosher salt

1 cup chopped Onions

1 tablespoon of black pepper

2 tablespoons of Creole spice by Taylor homemade

1/2 cup of sugar

1/2 cup apple cider vinegar

1 tablespoons of red pepper flakes


Directions:

1. Dump the greens, peppers, onions, and smoked turkey wings into the pot. Add water and bring to a boil. Allow to cook on medium heat for about 30 minutes. The greens should be fragrant and they should have cooked down some.

2. After about 45 minutes, add all the seasonings, chicken broth along with more water, if needed. Allow the greens to cook on simmer for about 10. Total cook time 1 hour 30 minutes.... why because i like my greens tender tender lol


Tip: If you are making the greens for a large group, such as Christmas dinner. I recommend doubling all ingredients listed above.
