Elote: Mexican Street Corn
1. 6 ears corn, shucked and cleaned
2. 1/2 cup mayonnaise
3. Chili powder
4. 1/3 cup Grated cotija cheese
5. Freshly chopped cilantro
6. Line wedges, for serving
Directions:
Mix Mayo, chili powder, Corona Cheese, and cilantro in a bowl. Preheat grill or grill pan to medium-high. Grill corn, turning often, until slightly charred all over, typically around 10 minutes.Brush corn with a layer of mayonnaise and sprinkle with chili powder, cotija, and cilantro. Serve warm with lime wedges
