2 Cups of your favorite pancake batter. I used Taylor Homemade
8oz of cream cheese
½ Cup sugar
1 Cup of fresh or frozen Blue Berries
½ cup of honey
First add blueberries, honey and ½ tablespoon of sugar to a bowl. And sit aside. Next add 3 eggs and sugar to mixture and blend until smooth. Next you will add the cream and yogurt. Lastly, add your pancake batter and blueberries.
Heat your waffle iron and add a ½ cup of waffle mix at a time. “Add more depending on the size of you waffle iron” This mix will make 8 waffles.
Top with whip cream and additional blueberries and serve. I typically make my own whip cream. Please see the recipe below:
Whip Cream Ingredients:
1 Pint or 2 cups of heavy whipping cream (COLD)
½ Cup powdered sugar
1 Tsp Pure Vanilla Extract
1. Chill your mixing bowl in the fridge for at least 15-30 minutes or more.
2. Add whipping cream, powdered sugar, and vanilla extract to the chilled bowl
3. Using the whisk attachment, beat for 90 seconds or more until stiff.
4. Transfer to a piping bag or serve with a spoon.
